2 Easy Recipe Ideas for Your RV Meals (+ cooking tips & tricks)

We chose these 2 easy RV meals that you can add to your meal planning. They are RV kitchen friendly, and you can even make them outside if you’re camping. Keep it simple! Prefer one-pot meals, Dutch ovens, cast iron skillets, and instant pots are your best friends.

But before we start cooking we know that planning meals when RVing can seem overwhelming, but with a little bit of preparation, it can be a fun and enjoyable experience. Here are some tips for planning meals when RVing:

  • Make a meal plan: Before you hit the road, plan out your meals for each day of your trip. This will help you avoid last-minute decisions and ensure that you have all the ingredients you need.

  • Consider your storage space: When planning your meals, keep in mind the amount of storage space you have in your RV kitchen. You don't want to buy more food than you can store, or you may end up wasting food.

  • Shop for groceries ahead of time: Make a list of all the ingredients you need for your meals and shop for them before you leave for your trip. This will save you time and ensure that you have everything you need.

  • Stock up on non-perishables: When shopping for groceries, be sure to stock up on non-perishable items such as canned goods, rice, and pasta. These items have a long shelf life and won't spoil quickly.

  • Use versatile ingredients: When planning your meals, choose ingredients that can be used in multiple dishes. For example, chicken can be used in stir-fries, tacos, and salads.

Recipe Idea 1: One-Pot Pasta

Ingredients:

  •  8 oz spaghetti

  • 1 can diced tomatoes

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 cups vegetable broth

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • Salt and pepper, to taste

  • Parmesan cheese (optional)

Instructions:

  • In a large pot or Dutch oven, sauté onion and garlic until fragrant.

  • Add diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper. Stir to combine.

  • Add spaghetti and stir until it is submerged in the liquid.

  • Bring to a boil, then reduce heat to a simmer and cover the pot. Cook for 10-12 minutes, or until the spaghetti is cooked through.

  • Serve hot, topped with Parmesan cheese if desired.

Cooking Tips:

Use a pot or Dutch oven with a tight-fitting lid to prevent liquid from boiling over and making a mess. Adjust the amount of broth based on how much liquid your pasta absorbs. You may need to add more broth or water as it cooks.


Recipe Idea 2: Campfire Quesadillas

Ingredients:

  •  4 large flour tortillas

  • 1 can black beans, drained and rinsed

  • 1 bell pepper, diced

  • 1/2 red onion, diced

  • 1 jalapeño pepper, seeded and diced

  • 1 cup shredded cheddar cheese

  • Salt and pepper, to taste


Instructions:

  • Preheat a cast iron skillet over a campfire or propane stove.

  • Lay one tortilla flat in the skillet and sprinkle with half of the shredded cheese.

  • Add black beans, bell pepper, red onion, and jalapeño pepper on top of the cheese.

  • Sprinkle the remaining cheese on top of the veggies and season with salt and pepper.

  • Place the second tortilla on top of the cheese and veggies, and press down with a spatula.

  • Cook for 2-3 minutes, or until the bottom tortilla is golden brown.

  • Flip the quesadilla over and cook for another 2-3 minutes, or until the second tortilla is golden brown.

  • Repeat with the remaining tortillas and ingredients.

  • Slice into wedges and serve hot.


Cooking Tips:

Use a cast iron skillet for even cooking and to get a crispy tortilla. If you don't have access to a campfire, you can use a stovetop or portable grill instead.
